Samples of The Gold, our Carolina mustard sauce, and THE ’BAMA, our Alabama Style White Sauce, have officially been dropped off for lab testing.

After months of recipe refinement, test batches, and careful documentation, this is another milestone on the road to our 2027 launch. While we await the results, work continues on The OG.

One step closer to sharing the fire with the herd.

Two more recipes have made it through the Red Comb test kitchen.

After multiple rounds of tasting, adjusting, measuring, and documenting, the final formulations for The Gold Carolina Mustard Sauce and THE ’BAMA Alabama Style White Sauce have been selected. Sample bottles are now being prepared for submission and testing—the next important step toward a safe and responsible public launch in 2027.

The Gold brings our Carolina-inspired mustard flavor, while THE ’BAMA respects the nearly century-old Alabama white sauce tradition and refines it with a little Red Comb character.

We’re taking this journey one careful step at a time. No shortcuts, no rushed launch—just honest food, proper testing, and respect for the people who will eventually bring these bottles to their tables.

Next up: tackling the 20-plus-ingredient monster known as The OG.

After a little time, a good pour and some smoke, the idea got clearer. Then came the paperwork, government filings and all the legal stuff that made it official.

Now we’re building the sauce.

Over the last few weeks, the test kitchen has gotten a little more serious. Recipes that once lived in measuring cups, tablespoons and memory are being converted into precise gram-based formulas, documented batch by batch and tested for repeatability.

The Gold — our Carolina Mustard Sauce — has now gone through multiple controlled test batches. Every ingredient is weighed. Actual quantities are recorded. Finished batch weights are documented. pH is checked. And every adjustment gets written down before the next batch begins.

One more validation batch is planned before we consider The Gold ready for the next step in the testing process.

And then comes the one that started all of this.

The OG.

Our Carolina-style original is next on the bench for its own standardized one-gallon test batch, with the same approach: measure it, document it, reproduce it and make sure the bottle tomorrow tastes like the bottle today.

It may not be the flashy part of building a BBQ company, but this is the part that matters.

No guessing.

No “close enough.”

No secret splash of this or handful of that.

Measure twice. Cook once. Document everything.

Still testing.

Still learning.

Still not rushing it.

Things may have been a little quiet around the roost lately, but there’s been plenty happening behind the smoke.

Red Comb BBQ Co. continues to move closer to launch, one step at a time:

People are already asking for more sauce — including some outside California.

We’re not rushing this.

Before the first official bottle is sold, Red Comb BBQ Co. will be properly tested, compliant and ready to go.

Every box checked gets us a little closer.
